Picnics are a sure sign that warm weather is here. There’s almost nothing nicer than enjoying tasty treats al fresco. However, not every meal can be enjoyed outside, but that doesn’t mean you can’t feast on food that is oh-so-yummy. The key is to create food that can sit outside without going bad.

Greek Orzo and Grilled Shrimp Salad

Sure you could go with typical sandwiches or fried chicken, but if you really want to shake things up, choose something different, like Greek orzo and grilled shrimp salad. Not only is this dish yummy, but it’s healthy and easy to make. It will also make you feel like you’re eating at a gourmet outdoor restaurant.

To make the tasty dish, cook ? of a pound of orzo, according to the box’s directions. Make sure it is al dente. Then de-seed and slice one large cucumber and three green onions. Halve a pint of grape tomatoes, then combine all of the ingredients in a bowl.

Now pour three tbsp. of Dijon mustard and ª cup each of chopped dill and white wine vinegar into a blender and blend the ingredients until they are smooth. With the blender on, pour ® cup of olive oil into the blender until all the ingredients are processed well together. Pour the mixture over the orzo and other ingredients, add salt and pepper to taste, then fold in ? cup of crumbled Feta cheese.

Turn your grill onto high heat and brush 16 peeled and de-veined tasty, fresh shrimp with olive oil. Sprinkle them with salt and pepper, then place them on the grill for about two minutes on each side. Divide the orzo evenly on the plates, then place the shrimp on top. Dive in and be prepared to receive a ton of compliments.

Rhubarb Slaw

Cole slaw is a picnic favorite; however, the mayonnaise can go bad in the sun and let’s face it ? it can be boring sometimes. Shake things up by making rhubarb slaw. This delicious side dish is sure to become your new favorite.

To make it, julienne 1 pound of rhubarb with a sharp and sturdy knife and place it in a heatproof bowl. Now boil 2 cups of apple cider vinegar in a large pot, along with 1 tbsp. each of salt and pepper, 1 ® cup of light brown sugar, three cloves of sliced garlic, ® cup of sliced ginger and 1 ® tsp. each of red pepper flakes and mustard seed. Pour the brine over the rhubarb and refrigerate overnight.

Drain the rhubarb and save ® cup of the brine. Slice one head of cabbage and carrot, and mix it all together with the rhubarb, brine, 2 tbsp. Of olive oil and salt and pepper to taste. Place it in the fridge until the cabbage and soft and get ready to dive in.

Jam Sandwiches

What’s a picnic without dessert? Fortunately, you can satisfy your sweet tooth by creating a easy and elegant jam sandwich and it couldn’t be easier to make.

Simply take two store-bought sugar cookies ? or you can make your own if you’d like ? and spread your favorite jam on them. Place the cookies together to create a sandwich, then dust them with confectioner sugar. Repeat this process for all of the sandwiches you want to create. A good rule of thumb is to create two sandwiches for each guest. The jam sandwiches are the perfect end to an outdoor picnic and are super easy to serve.
