Chicken is a staple in my family’s diet. But it’s easy to get into a rut and fix the same old dishes over and over. If you’re like me and are looking for some new and easy chicken recipes, look no further. These recipes are favorites at my house.

 

Oven Ranch Chicken

 

Ingredients:

 

1/3 cup bread crumbs
1 0.4-ounce package buttermilk ranch dressing mix
1 teaspoon garlic salt
ª cup grated parmesan cheese
1 8-ounce carton sour cream
4 boneless, skinless chicken breasts

 

Instructions:

 

  • Preheat oven to 350 degrees F.

 

  • Combine bread crumbs, salad dressing mix, garlic salt and parmesan cheese.

 

  • Dredge chicken breasts through sour cream, then roll in crumb mixture until completely covered.

 

  • Place breasts in greased 9 x 13 baking dish and bake for 25 to 30 minutes until cooked through. This recipe is great served with steamed cauliflower.

 

Chicken Rice Bake

 

Ingredients:

 

1 cup instant rice
1 cut up fryer chicken
2 cans cream of mushroom soup
® cup milk
1 packet onion soup mix

 

Instructions:

 

  • Preheat oven to 375 degrees F.

 

  • In a greased 9 x 13 baking dish, layer rice then chicken.

 

  • Mix cream of mushroom soup, milk and onion soup mix in small bowl.

 

  • Pour over chicken, making sure the rice is completely covered.

 

  • Cover dish with foil and bake for one-and-a-half hours.

Easy Chicken Parmesan

 

Ingredients:

 

® cup Italian-style bread crumbs
1/8 cup grated Parmesan cheese
® teaspoon garlic powder
ª teaspoon salt
1 cup canned spaghetti sauce
4 slices mozzarella cheese
4 boneless, skinless chicken breasts

 

Instructions:

 

  • Preheat oven to 425 degrees F.

 

  • Combine bread crumbs, parmesan, garlic powder and salt in a shallow bowl.

 

  • Spray each breast with cooking spray and then coat evenly with bread crumb mixture.

 

  • Spray baking dish with cooking spray and add chicken.

 

  • Bake 12 to 14 minutes until chicken is no longer pink.

 

  • Pour ª-cup spaghetti sauce over each piece of chicken and top with a slice of mozzarella. Return to oven and bake until cheese melts.

 

Chicken and Noodles

 

Ingredients:

 

1 16-ounce package of dumpling or homestyle noodles (egg noodles will work, too)
3 cups cooked chicken, shredded or cubed
1 can cream of mushroom soup
1 8-ounce carton sour cream
2 teaspoons garlic salt

 

Instructions:

 

  • In a large saucepan, boil noodles as directed; drain and return to pan.

 

  • Add chicken, soup, sour cream and garlic salt. Mix well.

 

  • Serve with a salad and some rolls, and you have a simple, hearty meal.
